Potato and rosemary gratin

Creamy parmesan baked potatoes, a comforting winter side dish.
Ingredients:
  • 1kg Red Delight potatoes, peeled
  • 300ml pouring cream
  • 2 tsp fresh rosemary, chopped
  • 40g (1/2 cup) parmesan, finely grated
Instructions:
  • Preheat the oven to 190°C (170°C fan forced) and grease a 2L (8 cup) baking dish. Boil the potatoes in cold water for 5 minutes until slightly tender. Drain and let them cool before slicing into thin 2mm pieces.
  • Arrange the potato slices in the dish. Combine the cream and rosemary in a saucepan over medium heat, add seasoning. Heat until just boiling, then pour over the potatoes. Sprinkle with cheese and bake for 40 minutes until golden and tender. Let it rest for 20 minutes before serving, covering loosely with foil.
