Delicious pizza bites, ideal for entertaining.
Ingredients:
  • 3 small (425g total) unpeeled desiree potatoes, very thinly sliced (see notes)
  • 20.00 ml fresh rosemary leaves, roughly chopped
  • 500g packet (2) pre-baked rectangular pizza bases (see notes)
  • 125.00 ml caramelised onion
  • 82.50 ml finely grated parmesan
  • Extra rosemary leaves, to serve
Instructions:
  • Preheat your oven to 220°C (200°C fan-forced) and grease a large baking tray.
  • In a bowl, combine potato with oil and rosemary, tossing to coat well. Spread half of the caramelized onion on the pizza base, leaving a 5mm border. Sprinkle with 1 tablespoon of Parmesan. Arrange half of the potato mixture on top, overlapping slightly. Sprinkle with another tablespoon of Parmesan and season. Repeat with the remaining ingredients.
  • Bake until golden and potato is tender, about 20 minutes. Let it stand for 5 minutes, then cut each into 12 rectangles, and serve sprinkled with extra rosemary.
