Gourmet pizza with thinly sliced potatoes, crispy prosciutto, and fresh rocket.
Ingredients:
  • 700g Red Rascal or Carisma potatoes
  • 60ml olive oil
  • 40.00 ml rosemary, finely chopped
  • Coles Brand Thin & Crispy Medium Pizza Bases (2 pack)
  • 120g mozzarella
  • 40g parmesan
  • 6 slices prosciutto
  • 60g rocket leaves
Instructions:
  • Boil potatoes in water for 12-15 minutes until tender. Drain, let cool slightly, and thinly slice.
  • Place 2 large baking trays in the oven and preheat to 220C.
  • In a jug, mix the oil, garlic, and rosemary. Season with salt and pepper. Spread half of the oil mixture on the pizza bases, followed by half of the mozzarella. Layer on the sliced potatoes and drizzle with the rest of the oil mixture. Finish off with the remaining mozzarella and sprinkle with parmesan before baking.
  • Place the pizzas on the trays and bake for 10-15 minutes or until they turn golden and the bases become crispy. Serve the pizzas with a delicious topping of prosciutto and rocket leaves.
