Rosemary & garlic potatoes with baby carrots

Delicious garlic and rosemary roasted potatoes, a flavorful and satisfying side dish.
Ingredients:
  • 4 garlic cloves, skin on
  • 2kg desiree potatoes, peeled, cut into 2cm pieces
  • 125.00 ml (about 1 bunch) fresh rosemary leaves
  • 125ml (1/2 cup) olive oil
  • 4 bunches baby (Dutch) carrots, trimmed, peeled
Instructions:
  • Preheat your oven to 200°C. Gently bruise the garlic with the back of a knife. In a large bowl, combine the garlic, potato, rosemary, and 80ml (1/3 cup) of oil. Season with salt and pepper, then mix everything together.
  • Spread the mixture evenly onto 2 baking trays. Bake in the oven on the top and middle shelves, shaking the trays occasionally and switching their positions halfway through baking. Bake for 40 minutes or until golden brown.
  • In a baking dish, arrange carrots and drizzle with remaining oil. Season with salt and pepper, then toss to coat evenly. Bake on the bottom shelf of the oven for 35 minutes or until tender. Serve and enjoy!
