Potato bombas

Recreate the irresistible potato bombas from La Cova Fumada in Barcelona and elevate the humble potato into a culinary marvel.
Ingredients:
  • 4 large potatoes (1kg)
  • 2 large free-range eggs
  • 150 g Manchego cheese
  • 100 g fresh breadcrumbs
  • 1 x 400g jar of arrabbiata sauce
Instructions:
  • Poke potatoes with a fork and microwave on high for 30 minutes until tender, turning halfway. Scoop out insides into a bowl and mash until smooth. Mix in egg yolks and chopped Manchego. Shape mixture into 6 balls, then dip in beaten egg whites and coat with breadcrumbs. Fry in olive oil until golden. Serve on spicy arrabbiata sauce, grate more Manchego, season, and drizzle with olive oil.
