Creamy mashed potato and smoked Gouda bombs with crispy bacon - a party-perfect appetizer.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 24 baby red potatoes
  • 1 cup shredded smoked Gouda cheese
  • 0.25 teaspoon onion powder
  • salt and ground black pepper to taste
  • 0.5 pound bacon, cut into thirds
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • In a skillet over medium heat, heat up 1 tablespoon of olive oil. Sauté the garlic until fragrant, which should take about 1 minute, stirring constantly.
  • In a microwave-safe bowl, combine potatoes with 1 tablespoon of olive oil, making sure they are evenly coated. Microwave for about 6 minutes until potatoes are fork-tender. Let cool for 5 minutes before handling.
  • Cut potatoes in half, then carefully remove the insides and transfer them to a bowl, keeping the potato skins to the side.
  • Mix together garlic, Gouda cheese, onion powder, salt, and pepper with the potato flesh until well combined. Stuff potato skins with the potato mixture and sandwich the potato halves. Wrap each filled potato with a slice of bacon and arrange on a baking sheet.
  • Cook bacon in the preheated oven until it's crispy, about 15 to 20 minutes.
