Crispy golden-brown Indian potato flatbread - perfect for breakfast or dinner.
Ingredients:
  • 1 cup mashed potatoes
  • salt to taste
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon ground turmeric
  • 1 tablespoon fresh cilantro, finely chopped
  • 3 tablespoons vegetable oil
  • 2 cups whole wheat flour
  • 0.75 cup vegetable oil for frying
  • 1 tablespoon butter, melted
Instructions:
  • Combine mashed potatoes, salt, cayenne, turmeric, cilantro, and 3 tablespoons of vegetable oil in a bowl until fully mixed. Gradually mix in flour until dough is stiff yet pliable; add drops of water if needed. Transfer dough to a greased bowl, cover with plastic wrap, and let it rest for 10 minutes.
  • Heat a nonstick griddle over medium heat.
  • Divide the dough into eight portions the size of a lemon and roll out on a lightly floured surface to 1/4-inch thickness. Fry the chapatis on a hot griddle using 1 teaspoon of oil for each side until brown spots form and the dough is cooked. Brush with melted butter and serve hot.
