Potato croquettes

Indulge in comforting, savory potato croquettes, a versatile and easy-to-make treat loved since childhood. Perfect for any occasion, these crispy bites are sure to satisfy.
Ingredients:
  • 4 medium-sized floury potatoes peeled and quartered
  • 2 large eggs beaten
  • 50 g plain dried breadcrumbs
  • 2 tablespoons plain flour
  • 3 tablespoons finely grated Pecorino Romano cheese
  • 1 tablespoon chopped flat-leaf parsley
  • sea salt
  • 60 ml olive oil plus more as needed
Instructions:
  • 1. Boil the potatoes until tender, about 15-20 minutes, then drain and mash in a bowl. Mix in eggs, breadcrumbs, flour, cheese, parsley, and salt. Adjust consistency with more breadcrumbs or flour. 2. Shape tablespoons of the mixture into 4-5cm long logs. 3. Fry the croquettes in hot olive oil for about 6 minutes, turning to brown evenly. 4. Drain on paper towels and serve hot. Reheat in the oven if making ahead.
