Creamy mashed potatoes, sweetened with sugar and coconut, transformed into delectable potato fudge.
Ingredients:
  • 1 potato
  • 3 cups confectioners' sugar
  • 1 cup sweetened flaked coconut
  • cooking spray
Instructions:
  • In a large pot, cover the potato with water and bring it to a boil. Lower the heat to medium-low and simmer until the potato is tender, approximately 15 minutes. Drain the potato and let it cool until it's easy to handle, about 5 minutes.
  • Peel and mash the potato in a bowl. Stir in vanilla extract followed by confectioners' sugar until mixture is smooth and firm. Gently fold in coconut.
  • Prepare a 9-inch cake pan with cooking spray. Evenly spread the potato mixture in the pan. Chill until firm, roughly 1 hour. Cut into squares to serve.
