Decadent sweet potato brownies: rich and fudgy, studded with chocolate chips, and sprinkled with crunchy pecans. Sweet potato adds a moist and delicious twist without overpowering the chocolate flavor.
Ingredients:
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoon  baking soda
  • 1/8 teaspoon salt
  • 1 cup unsweetened sweet potato puree
  • 3/4 cup packed brown sugar
  • 1/2 cup salted butter, melted
  • 1 egg
  • 2 teaspoon  pure vanilla extract
  • 1 1/2 cup semi-sweet chocolate chips, divided
  • 1/2 cup chopped pecans (optional)
Instructions:
  • Collect your ingredients. Preheat the oven to 325°F (165°C) and generously grease a 9x13-inch baking pan.
  • Combine flour, cocoa powder, baking soda, and salt in a bowl and set aside.
  • In a large bowl, mix sweet potato puree, brown sugar, butter, egg, and vanilla until smooth using an electric mixer on low speed.
  • Combine the flour mixture with the wet ingredients until just mixed in. Gently fold in 1 cup of chocolate chips.
  • Transfer the batter into the pan, then generously top it with the remaining 1/2 cup of chocolate chips and pecans, if preferred.
  • Bake the brownies for about 25 minutes until the edges and surface are just set but still soft. Allow them to cool in the pan for at least 30 minutes. For optimal results, refrigerate for at least 4 hours before cutting.
