Make crispy potato pancakes with timeless flavors and techniques.
Ingredients:
  • 2 tablespoons margarine
  • 1 medium onion, chopped (1/2 cup)
  • 1 medium carrot, finely shredded (3/4 cup)
  • 2 1/2 cups water
  • 1 box (about 6 oz) potato pancake mix
  • 2 tablespoons matzo meal
  • 1/8 teaspoon ground nutmeg
  • 2 egg whites
Instructions:
  • Preheat the oven to 425°F and generously grease either one large or two medium cookie sheets with shortening or cooking spray.
  • In a 1 1/2-quart saucepan, bring margarine, onion, carrot, and water to a boil. Reduce heat, cover, and simmer for 2 minutes.
  • Combine pancake mix, matzo meal, parsley, nutmeg, and pepper in a medium bowl. Add the hot vegetable mixture and stir until well combined. In a separate small bowl, beat egg whites with an electric mixer on high speed until stiff peaks form. Gently fold the egg whites into the potato mixture until fully incorporated.
  • Drop 12 mounds of the mixture onto the cookie sheet. Gently flatten each mound into a 3-inch round that is approximately 1/2 inch thick.
  • Bake for 20-25 minutes until light golden brown. Let cool for 1-2 minutes, then remove from the cookie sheet and serve immediately, bottom side up.
