20-minute prep time for a cheesy side dish, ideal complement to a festive meat entrée.
Ingredients:
  • 4 lb russet potatoes, peeled
  • 1 large onion
  • 2 cups small-curd cottage cheese
  • 2 cups shredded mild Cheddar cheese
  • 6 tablespoons chopped fresh chives
  • 3 cloves garlic, finely chopped
  • 1/8 teaspoon freshly ground nutmeg
  • 4 eggs, beaten
  • Salt and pepper to taste
Instructions:
  • Preheat the oven to 400°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Grate the potatoes using the larger holes of a box grater, then place the shredded potatoes in a large bowl and cover them with cold water.
  • Grate onion into a large bowl using a box grater. Mix in cottage cheese, Cheddar cheese, 4 tablespoons of chives, garlic, nutmeg, and eggs.
  • After draining the potatoes, give them a quick rinse under running water and then press out any excess water using your hands. Combine the potatoes with the cheese mixture in a bowl, season with salt and pepper, mix thoroughly, and spoon into a baking dish.
  • Bake for 1 hour until beautifully golden, then sprinkle with the rest of the chives.
