Wholesome hash brown latkes with green onions for a tasty kick. Serve with applesauce or sour cream.
Ingredients:
  • 1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
  • 0.5 cup Better'n Eggs®
  • 0.33333334326744 cup whole wheat flour*
  • 0.25 cup finely chopped green onion
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon baking powder
  • 1 tablespoon oil, or more as needed
Instructions:
  • Combine hash browns, egg substitute, flour, green onion, pepper, salt, and baking powder in a large bowl, stirring until well mixed.
  • In a 12-inch nonstick skillet, warm up 1 tablespoon of oil over medium heat.
  • Fry four latkes simultaneously. Scoop 1/4 cup of potato mixture into a 3 1/2-inch circle in the pan. Cook for 4 to 5 minutes, flip, and cook the other side. Continue with the rest of the potato mixture, adding more oil to the pan as necessary. Season with salt and pepper to taste.
