Potato Latkes

Hanukkah latkes: Crispy, golden potato pancakes served with applesauce or sour cream.
Ingredients:
  • 1/4 cup vegetable oil
  • 3 cups shredded peeled potatoes, drained on paper towels
  • 1 cup shredded carrots
  • 1/2 cup finely chopped onion
  • 1 tablespoon chopped fresh chives
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 4 eggs, beaten
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
Instructions:
  • Heat 2 tablespoons of oil in a 12-inch nonstick skillet over medium-high heat. In a medium bowl, mix potatoes and remaining ingredients well. Form 9 patties, each about 3 to 4 inches in diameter, using about 1/3 cup of mixture for each patty.
  • Sear patties for 2 to 3 minutes per side until they achieve a lovely golden brown color. Keep warm by covering while you cook the rest of the delicious patties. Repeat the process with the remaining oil and patties. Serve promptly.
