Indulge in crispy potato latkes with sweet caramelized pears, creamy goat cheese, and a tangy sherry vinegar drizzle.
Ingredients:
  • 2 cups peeled and shredded potatoes
  • 3 eggs, beaten
  • 2 tablespoons all-purpose flour
  • 1 tablespoon grated onion
  • 1.5 teaspoons salt
  • 0.5 cup oil for frying
  • 1 tablespoon oil
  • 2 pears, cored and cut into 1/2-inch slices
  • 0.25 cup brown sugar, divided
  • 8 ounces goat cheese, sliced into 1/4-inch thick rounds
  • 0.25 cup sherry vinegar
Instructions:
  • Wrap the shredded potatoes in cheesecloth and squeeze out any extra moisture.
  • Combine potatoes, eggs, flour, onion, and salt in a mixing bowl.
  • In a large skillet, heat 1/2 cup of oil over medium-high heat until it starts to shimmer. Spoon the potato mixture into the hot oil, pressing them down to create pancakes. Fry the latkes until they are golden and crispy, about 3 to 5 minutes on each side. Drain on paper towels before serving.
  • In a skillet over medium-high heat, warm 1 tablespoon of oil. Add the pears and sprinkle 2 tablespoons of brown sugar over them. Cook until pears are browned and sugar is melted, about 3 to 5 minutes per side.
  • Arrange latkes beautifully on a platter. Add a round of creamy goat cheese and a sliced pear on each latke. Sprinkle luscious brown sugar over the pears and drizzle with aromatic sherry vinegar.
