Cajun Potato Latkes

Spice up your potato latkes with a kick of Cajun seasoning!
Ingredients:
  • 2 cups peeled, shredded potatoes
  • 0.25 onion, shredded
  • 0.33333334326744 cup chopped green onion
  • 2 eggs, beaten
  • 2 tablespoons all-purpose flour, or as needed
  • 1.5 teaspoons Cajun seasoning, or to taste
  • 1 cup canola oil, or as needed
Instructions:
  • Wring the potatoes in a cloth to remove excess moisture, then thoroughly combine them with onion, green onion, eggs, flour, and Cajun seasoning in a bowl.
  • In a large, heavy skillet, heat the oil over medium heat until it shimmers (oil should be around 1/3 inch deep). Spoon about 2 tablespoons of the potato mixture per patty into the hot oil, gently press to flatten the patties to 1/4 to 1/2-inch thickness. Cook the patties in the hot oil until golden and crisp on one side, approximately 5 minutes, then flip and cook the other side. Drain the latkes on paper towels and serve piping hot.
