Elevate potatoes with this elegant and effortless side dish.
Ingredients:
  • 750g sebago (unwashed) potatoes, washed
  • 60g (3 tbsp) butter, melted
  • Salt & ground black pepper, to taste
Instructions:
  • In a medium saucepan, add unpeeled potatoes and cover with cold water. Bring to a boil over high heat, then reduce heat to medium-high and boil for 10 minutes uncovered. Drain the potatoes and let them cool completely.
  • Peel and grate the potatoes in a large bowl. Add butter, salt, and pepper. Mix thoroughly.
  • Preheat a small non-stick frying pan (18-20cm base measurement) over medium heat. Add the potato mixture, press down firmly, and cook for 15 minutes until the base is crisp and golden brown.
  • Transfer the rosti to a spacious board. Invert the rosti back into the pan with the golden side facing up. Continue cooking for an additional 10 minutes, or until fully cooked and the bottom is crispy and golden brown.
  • Transfer to a serving plate, slice into wedges, and enjoy promptly.
