Potato rostis topped with smoked salmon & chives

Elevate your party with smoked salmon potato rostis.
Ingredients:
  • 3 (about 600g) desiree potatoes, peeled, coarsely grated
  • 1 red onion, peeled, coarsely grated
  • Vegetable oil, to shallow fry
  • 80g (1/3 cup) sour cream
  • 5 slices smoked salmon, each cut into 4 strips
  • Finely chopped fresh chives, to serve
Instructions:
  • Squeeze out excess moisture from the potato and onion mixture using your hands in a colander. Transfer to a large bowl and season with salt and pepper.
  • Pour enough oil in a medium non-stick frying pan to reach 5mm up the side. Heat over medium heat. Spoon five 1-tablespoon portions of the potato mixture into the pan and flatten into 4cm discs using an egg lifter or small palette knife. Cook 2-3 minutes per side until golden and crisp. Transfer to a paper towel-lined plate. Repeat with remaining potato mixture in 3 more batches, reheating the pan and adding more oil as needed.
  • Place the rostis on a serving platter. Add a dollop of sour cream on each rosti, then layer with smoked salmon and sprinkle with chives before serving.
