Irresistibly crunchy potato scallops you won't be able to eat just one!
Ingredients:
  • 2.00 gm baking powder
  • 1 egg
  • 82.50 gm water
  • 1 large potato
  • Light olive oil, to fry
  • Plain flour, extra, to dust
  • Sea salt flakes, to serve
  • tartare sauce, to serve
Instructions:
  • Boil a large potato until tender, then cool. Slice into 8 thick slices.
  • In a bowl, combine flour and baking powder, creating a well in the center. Crack an egg into the well and gradually pour in water while whisking until a smooth batter forms.
  • Fill a medium saucepan with light olive oil up to one-third of the way up the side. Heat over high heat until it reaches 180C.
  • Coat potato slices in a light dusting of plain flour, followed by dipping in the batter and shaking off excess. Fry in oil in 2 batches for 2 minutes each until golden. Sprinkle with sea salt flakes and serve with tartare sauce.
