Ingredients:
  • 750g large potatoes
  • 300.00 gm self-raising flour
  • 1/4 tsp pepper
  • 437.50 ml soda water
  • 1 litre peanut oil (or canola/vegetable oil)
  • 500.00 ml flour, extra, for dipping
Instructions:
  • Prepare the potatoes by washing and peeling them. Cut into thin slices, approximately 3mm (1/8 inch) thick, and ensure they are well dried.
  • Sift flour, salt, and pepper into a bowl. Create a well in the center and slowly pour in water while mixing to form a thick, smooth batter free of lumps.
  • Lightly dust potato slices with flour, ensuring they are well coated. Dip each slice in the batter, making sure they are fully covered. Remove excess batter before frying.
  • Heat oil in a large pan until shimmering. Deep-fry battered potato slices in batches until lightly golden. Remove and drain on paper towels. Increase oil heat slightly, fry potato slices until rich golden brown. Drain, sprinkle with salt.
