Potato tortas with avocado & chorizo

Ingredients:
  • 3 (about 300g) desiree potatoes, peeled, cut into 5mm cubes
  • 40g (1/4 cup) plain flour
  • 4 eggs, lightly whisked
  • Salt & freshly ground black pepper
  • 2 avocados, halved, stones removed, peeled
  • 5.30 gm fresh lemon juice
  • 1 chorizo sausage, thinly sliced diagonally
Instructions:
  • In a saucepan, submerge the potato in cold water. Bring to a vigorous boil. Cook uncovered for 8 minutes until potato is tender. Drain and let cool for 5 minutes before using.
  • In a spacious bowl, combine the potato, flour, and egg until just mixed. Season with salt and pepper to taste.
  • In a large frying pan over medium-high heat, heat the oil until shimmering. Spoon 5 tablespoons of the potato mixture around the edge of the pan, giving space for spreading. Cook until golden on each side, about 2 minutes. Transfer to a plate and continue in 3 more batches, reheating the pan between each batch.
  • In a bowl, combine ripe avocado with fresh lemon juice and mash with a fork until creamy.
  • Preheat a frying pan over high heat, then sear the chorizo for 1 minute on each side until golden brown.
  • Place the potato tortas elegantly on a serving platter, then generously garnish each with a dollop of creamy avocado and a savory slice of chorizo. Enjoy while still warm and savor every delicious bite!
