Try a unique Spanish tortilla potato bake with a hint of smokiness.
Ingredients:
  • 60ml (1/4 cup) olive oil
  • 200g speck, cut into 1cm pieces
  • 1 brown onion, halved, thinly sliced
  • 4 garlic cloves, crushed
  • 3 (about 600g) desiree potatoes, peeled, thinly sliced
  • 8 eggs
  • Salt & freshly ground black pepper
Instructions:
  • Heat 1 tablespoon of oil in a large frying pan over medium-high heat. Sauté the speck, onion, and garlic for 10 minutes until the onion softens. Transfer to a bowl.
  • In the same pan, heat the remaining oil. Cook the potato, stirring occasionally, for about 25 minutes until it turns golden brown and becomes tender.
  • Preheat the grill on high heat. Whisk eggs in a bowl until well combined, then season with salt and pepper.
  • Sprinkle the potato with the onion mixture, then pour the egg over it, gently shaking to loosen it from the pan. Cook over medium-high heat for 8 minutes or until the tortilla's base is golden and set.
  • Position the tortilla under the preheated grill, about 6cm from the heat source. Cook for about 5 minutes until it turns golden and sets.
  • Grab a round-bladed knife to gently release edges of the tortilla. Allow it to cool off for 5 minutes, then slice into wedges for serving.
