Sausage, onion and potato tortilla

Make a delicious Spanish tortilla with sausage, onions, and potatoes for the family.
Ingredients:
  • 400g potatoes, peeled, cut into 1.5cm pieces
  • 18.20 gm olive oil
  • 500g angus beef, garlic and parsley sausages
  • 1 red onion, thinly sliced
  • 2 garlic cloves, crushed
  • 8 free range eggs, lightly whisked
  • 125ml thickened cream
  • 40g parmesan
  • 40.00 ml flat-leaf parsley, finely chopped
  • 250g vine-ripened cherry tomatoes
  • Olive oil spray
  • Green salad, to serve
  • Crusty bread, to serve
Instructions:
  • Preheat your oven to 200C. Line a baking tray with parchment paper. Boil the potato in a saucepan of water for 10 minutes or until just tender, then drain.
  • Heat half of the oil in a 22cm ovenproof frying pan over medium heat. Brown and almost cook sausages for 7-10 mins. Slice into 5mm-thick pieces after transferring to a board.
  • In the same pan, heat the remaining oil over medium heat, then add the onion and cook while stirring for 3 minutes. Add the garlic and cook for 1 minute. Return the sausages and potato to the pan. In a large bowl, combine egg, cream, parmesan, parsley, and season with salt and pepper. Pour the mixture over the sausage and potato, stirring to distribute evenly. Cook over low heat for 5 minutes until the edges start to set. Transfer the tortilla to the oven and bake for 15-20 minutes or until browned and set.
  • As the tortilla bakes, lay the tomatoes on the prepared tray, then mist with oil and roast in the oven alongside the tortilla for 12 minutes or until softened.
  • Allow tortilla to cool for 5 minutes before serving with ripe tomatoes, crisp salad, and freshly baked bread.
