Delicious frittata with sausage, potato, onion, and peas - perfect for entertaining.
Ingredients:
  • 3 thick sausages
  • 2 potatoes, peeled and thinly sliced
  • 1 tomato, chopped
  • 62.50 ml frozen peas, thawed
  • 1 onion, thinly sliced
  • 20.00 ml balsamic vinegar
  • 16.00 gm brown sugar
  • 8 eggs
  • 126.25 gm cream or milk
  • 62.50 ml parsley, chopped
  • 125.00 ml tasty cheese, grated
  • Salad or vegetables, to serve
Instructions:
  • Preheat a 25cm frying pan over high heat. Cook 3 thick sausages of your choice for 5-10 minutes, turning regularly until golden brown and fully cooked. Slice the sausages thinly.
  • In the same pan, heat a tablespoon of fragrant olive oil over high heat. Sauté two thinly sliced, peeled potatoes until they turn golden brown, about 4-5 minutes. Toss in one chopped tomato and a quarter cup of thawed frozen peas, cooking for an additional minute. Plate the flavorful mixture and serve.
  • In the same pan, warm up 1 tablespoon of olive oil. Sauté 1 thinly sliced onion over high heat for 2-3 minutes, then add 1 tablespoon each of balsamic vinegar and brown sugar. Stir and cook for 1 minute. Add back the sausage, potatoes, tomatoes, and peas to the pan.
  • Combine 8 eggs, 1/2 cup cream or milk, and 1/4 cup chopped parsley in a jug. Season to taste. Pour the mixture over the sausage. Cook on low heat for 4-5 minutes until it starts to set.
  • Top with 1/2 cup of savory grated cheese and broil in a preheated oven for 3-4 mins until golden brown and frittata is set. Enjoy with a side of salad or veggies.
