Spiced up sausage and pea pie bursting with bold flavors.
Ingredients:
  • 500g potatoes, peeled, chopped
  • 2 garlic cloves, finely chopped
  • 450g Italian pork sausages, skins removed, roughly chopped
  • Pinch of chilli flakes (optional)
  • 20.00 ml rosemary leaves, finely chopped
  • 250ml white wine
  • 2 zucchinis (about 300g), coarsely grated
  • 750.00 ml baby spinach leaves
  • 120g pea
  • 40g unsalted butter, melted
  • 120g ricotta
  • 40.00 ml chopped mint
  • Mixed salad leaves, to serve
Instructions:
  • In a saucepan, cover the potatoes with cold water and a pinch of salt. Boil over medium-high heat until tender, about 15-20 minutes.
  • Heat oil in a large pan over medium heat. Saute onion and garlic until very soft, about 3-4 minutes. Add sausage, chili, and rosemary, cook until sausage is browned, about 3-4 minutes. Pour in wine and cook until almost evaporated, about 1-2 minutes. Add vegetables, cook until any liquid has evaporated, about 2 minutes. Season generously and set aside.
  • Achieve creamy mashed potatoes, then gently fold in butter, ricotta, and fresh mint. Season to enhance flavors. Distribute the pie filling evenly among four 2-cup (500ml) pie dishes or ramekins and generously top with the mashed potatoes. Use a fork to create a rustic design on the surface, then briefly broil the pies under high heat for 4-5 minutes until lightly browned. Serve alongside a crisp salad for a delightful meal.
