Potato with rosemary and prosciutto

Simple and versatile side dish for any meat entree.
Ingredients:
  • 2 large potatoes, skin on
  • 9.20 gm olive oil
  • 4 slices prosciutto, cut into thin strips
  • 2 tsp roughly chopped rosemary
Instructions:
  • Dice the potatoes into 1cm cubes and steam them until almost tender. Heat olive oil in a large non-stick frying pan over medium-high heat. Add the steamed potatoes and cook until they start to brown. Then, add prosciutto and rosemary. Continue cooking for 3-4 more minutes until the potatoes are golden brown and the prosciutto is slightly crisp. Serve hot.
