Potatoes with crispy sage

Ingredients:
  • 800g desiree potatoes, thinly sliced lengthways
  • 600g orange sweet potato, peeled, thinly sliced
  • 45.50 gm olive oil
  • 1 bunch sage, leaves picked
  • 125.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Preheat a barbecue plate or chargrill over medium heat and preheat the oven to 160°C/140°C fan-forced. Line a large baking tray with baking paper. Toss potatoes with 2 tablespoons of oil until coated. Cook the potatoes in batches for 3 to 4 minutes on each side until tender. Transfer to the prepared tray and keep warm in the oven.
  • Mix fragrant sage leaves with the rest of the oil in a bowl. Grill on a barbecue plate, flipping occasionally, until the sage is crispy, which should take about 2 to 3 minutes.
  • In a bowl, combine potatoes with fresh sage and parsley. Season generously with salt and pepper. Toss together until well mixed. Serve and enjoy!
