Sauteed Potatoes with Kale

Elevate your veggie game with crispy kale and potato sauté cooked with flavorful garlic and onion.
Ingredients:
  • 2 pounds white potatoes, cubed
  • 0.5 cup extra-virgin olive oil, divided
  • 1 bunch kale, stemmed and torn into pieces
  • 1 large onion, chopped
  • 4 cloves garlic, minced
Instructions:
  • In a large pot, add potatoes and cover with salted water. Bring it to a boil, then simmer on medium-low heat until potatoes are tender yet firm, about 15 minutes. Drain the potatoes.
  • In a large frying pan over medium-high heat, heat 2 tablespoons of olive oil until hot. Add kale pieces, lower heat to medium, cover, and cook, stirring occasionally, until kale softens and crisps slightly, about 5 minutes. Add onion and cook until translucent and softened, for 2 to 3 minutes. Stir in garlic.
  • Add the rest of the olive oil once the onions start to brown. Mix in the potatoes, season with salt and pepper, cover, and cook until potatoes are fully softened, approximately 5 minutes. Uncover, stir and cook until the potatoes slightly brown, around 10 minutes.
