Power salad jar recipe

Effortless lunch prep: Chop veggies, cook quinoa, layer in jar for quick assembly.
Ingredients:
  • 15.90 gm fresh lemon juice
  • 4.60 gm extra virgin olive oil
  • 5.90 gm Dijon mustard
  • 80g (1/2 cup) cooked quinoa (about 40g uncooked)
  • 30g sliced smoked salmon
  • 1 small beetroot, peeled, coarsely grated
  • 1/2 zucchini, coarsely grated
  • 1 small carrot, peeled, coarsely grated
  • 25g mixed salad leaves
  • 20.00 ml cottage cheese
  • 1 tsp pepitas
Instructions:
  • In a 500ml (2 cups) glass jar with a secure lid, mix together the lemon juice, oil, and mustard.
  • Layer quinoa, salmon, beetroot, zucchini, carrot, salad leaves, cottage cheese, and pepitas in the jar, then seal with the lid. Chill in the fridge until serving time.
  • Transfer the salad to a serving bowl and mix well to evenly coat with dressing.
