Try this delicious quick bread, a close relative of banana bread. Simple to prepare and oh-so-satisfying once baked!
Ingredients:
  • 1/3 cup packed brown sugar
  • 1/3 cup chopped pecans
  • 1 tablespoon butter or margarine, softened
  • 1 2/3 cups granulated sugar
  • 2/3 cup vegetable oil
  • 2 teaspoons vanilla
  • 4 eggs
  • 1 can (15 ounces) pumpkin (not pumpkin pie mix)
  • 3 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cloves
  • 1 cup chopped dates
Instructions:
  • Position the oven rack in the lower position so that the tops of the pans will be centered in the oven. Preheat the oven to 350°F. Grease only the bottoms of 2 loaf pans measuring 8 1/2x4 1/2x2 1/2 inches each, or 1 loaf pan measuring 9x5x3 inches, using shortening.
  • Combine all Praline Topping ingredients until you achieve a crumbly texture; then set it aside.
  • Combine granulated sugar, oil, vanilla, eggs, and pumpkin in a large bowl. Mix in all Date Bread ingredients except dates until well combined. Gently fold in dates. Transfer batter to pans and sprinkle with topping.
  • Bake until golden and a toothpick inserted in the center comes out clean: 8-inch loaves (50-60 minutes), 9-inch loaf (1 hour 10 minutes-1 hour 20 minutes). Cool for 10 minutes, then transfer loaves to wire rack. Allow to cool fully for about 1 hour before slicing.
