Instructions:
  • Preheat oven to 375°F (350°F for dark or nonstick pan). Line a 15x10x1-inch pan with foil or waxed paper, then grease or spray it to prevent sticking.
  • In a medium bowl, use an electric mixer to beat eggs on high speed for 2 minutes until thick and lemon-colored. Mix in pumpkin until well combined. Slowly add dry cake mix, cinnamon, nutmeg, and cloves on low speed, then beat for 1 more minute. Spread the batter evenly into the pan.
  • Bake for 10 to 14 minutes until the cake springs back when lightly touched in the center. Quickly release the cake from the pan edges, invert onto a powdered sugar-covered towel, remove the foil, and roll the cake tightly with the towel from the narrow end. Let it cool on a rack for at least 60 minutes.
  • In a medium bowl, use an electric mixer to beat cream cheese and brown sugar until smooth. Gradually add whipping cream and beat until stiff. Mix in 2 tablespoons of pecans. Unroll cake, remove towel, and spread two-thirds of the cream cheese mixture on the cake. Roll it up and spread the remaining cream cheese mixture on the outside. Top with the remaining 2 tablespoons of pecans. Refrigerate covered.
