Ingredients:
  • 1 cup packed brown sugar
  • 1/2 cup butter or margarine
  • 1/4 cup whipping (heavy) cream
  • 3/4 cup chopped pecans
  • 2 3/4 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 can (15 ounces) pumpkin (not pumpkin pie mix)
Instructions:
  • Preheat the oven to 350°F. Combine brown sugar, butter, and whipping cream in a 2-quart saucepan over medium heat, stirring occasionally, until the butter is melted. Pour the mixture into an ungreased 13x9x2-inch rectangular pan and sprinkle with pecans.
  • Combine flour, baking powder, cinnamon, salt, baking soda, nutmeg, and cloves; set aside. In a large bowl, use an electric mixer on medium speed to beat sugar, oil, eggs, and pumpkin for 1 minute, scraping the bowl constantly. Gradually add the flour mixture and beat on medium speed for 2 minutes, scraping the bowl occasionally. Carefully spoon the batter over the pecan mixture.
  • Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean. Allow it to cool for 10 minutes. Invert a heatproof serving tray over the pan, flip them together, and let the pan sit over the cake for a few minutes. Once cool, around 1 1/2 hours later, it's ready to enjoy!
