Prawn, tomato and basil pasta

Quick and tasty seafood dish for the whole family.
Ingredients:
  • 36.40 gm olive oil
  • 750g green prawns, peeled, tail intact, deveined
  • 1 onion, sliced
  • 2 garlic cloves, crushed
  • 1 small chilli, chopped
  • 400g can cherry tomatoes
  • 125.00 ml passata
  • 125.00 gm water
  • 125.00 gm white wine
  • 8.00 gm brown sugar
  • 375g packet fresh tagliatelle
  • 125.00 ml basil leaves, plus extra to serve
  • Shaved parmesan, to serve
Instructions:
  • In a large frying pan, heat half of the oil over high heat. Add the prawns and cook for 2-3 minutes until they change color. Transfer the cooked prawns to a bowl.
  • In a hot pan, sauté onion, garlic, and chili until onion is tender. Add tomatoes, passata, water, wine, sugar, and season to taste. Simmer on low heat for 10 minutes.
  • Cook pasta in a pot of salty boiling water until al dente, about 3-5 minutes. Drain and return to pot. Mix in sauce and prawns over low heat for 1-2 minutes. Serve with additional basil leaves and Parmesan on top.
