Fresh and flavorful salad perfect for a light and satisfying meal.
Ingredients:
  • 42.00 gm lemon juice
  • 23.40 gm Dijon mustard
  • 1kg barbecued prawns (see note)
  • 2 bunches barbecued asparagus (see note)
  • 200g baby rocket leaves
  • 2 witlof, leaves separated
Instructions:
  • Combine the lemon juice, mustard, and oil in a jar, then shake vigorously until mixed. Season with salt and pepper to taste.
  • Assemble prawns, asparagus, rocket, and witlof on plates. Top with lemon dressing and serve promptly.
