Prawn & courgette spaghetti

Ingredients:
  • 2 yellow courgettes
  • 3 green courgettes
  • 2 cloves of garlic
  • 2 fresh red chillies
  • 1 bunch of fresh dill or flat-leaf parsley
  • 500 g dried spaghetti
  • 1 large knob of unsalted butter
  • extra virgin olive oil
  • 600 g raw peeled prawns, from sustainable sources
  • ½ lemon
  • Parmesan cheese optional
Instructions:
  • Cut the courgettes in half lengthwise, then slice thinly on an angle. Slice the garlic thinly after peeling, and deseed and slice the chillies. Roughly chop the herbs. Cook the pasta according to package instructions. In a large frying pan over medium heat, melt the butter with a splash of oil. Add the courgettes and cook until slightly browned. Stir in the garlic, chilli, and prawns, cooking until prawns are done. Remove from heat and squeeze lemon juice over. Drain the pasta, saving some cooking liquid. Toss pasta with courgettes and prawns in the pan. Add reserved liquid if needed, then mix in dill or parsley. Season to taste and serve immediately, adding Parmesan if desired.
