Try these scrumptious seafood skewers for a perfect summer dish.
Ingredients:
  • 500g green prawns, peeled, deveined, roughly chopped
  • 500g thick white boneless fish, chopped
  • 125.00 ml fresh white breadcrumbs
  • 3 green onions, thinly sliced
  • 2 eggwhites
  • 1 lemon, rind finely grated, juiced
  • 125.00 ml dill leaves, finely chopped
  • 185.63 gm whole-egg mayonnaise
  • olive oil cooking spray
Instructions:
  • Submerge chopsticks in water for 30 minutes. Drain. In a food processor, pulse prawns until finely chopped. Transfer to a bowl. Repeat the process with fish. Combine the chopped prawn and fish with breadcrumbs, onions, egg whites, lemon zest, 1/3 cup of dill, salt, and pepper. Mix until fully incorporated.
  • Prepare your baking tray by lining it with plastic wrap. Divide the mixture into 12 portions and shape each portion into sausage shapes. Carefully insert a chopstick through the center of each sausage. Place them on the lined tray and cover with plastic wrap before chilling in the refrigerator for 30 minutes.
  • Mix together the mayonnaise, lemon juice, leftover dill, and season with salt and pepper.
  • Preheat the barbecue plate over medium heat, then oil the skewers. Cook for 5 to 7 minutes, turning frequently until done. Serve with lemon mayonnaise.
