Elevate your meal with a delicious Chinese-inspired prawn fried rice.
Ingredients:
  • 200g rice
  • 36.40 gm peanut oil
  • 12 green prawns, peeled (tails intact), deveined
  • 1 onion, cut into wedges
  • 2 garlic cloves, sliced
  • 2 tsp finely grated ginger
  • 150g shiitake mushrooms, thickly sliced
  • 1 long red chilli, seeds removed, finely shredded
  • 4 spring onions, finely shredded
  • 150g snow peas, trimmed, sliced
  • 60ml soy sauce
  • 48.80 gm oyster sauce
Instructions:
  • Prepare the rice following the package directions. Drain, rinse with cold water, and then spread out on a baking tray. Allow to cool, uncovered, in the refrigerator for 2-3 hours.
  • In a hot wok, sizzle 1 tablespoon of oil then quickly stir-fry the prawns until perfectly cooked. Set aside.
  • Drizzle the remaining oil into the wok, then toss in the onion, garlic, ginger, and mushrooms. Sauté for 2-3 minutes until the mushrooms are tender. Add the snow peas and stir-fry for an additional minute. Mix in the prawns and cooked rice, cooking for 1-2 minutes to warm through. Finally, stir in the soy sauce and oyster sauce before serving.
  • Divide the mixture into individual serving bowls and top with sliced chili and chopped spring onions for a vibrant finish.
