Ingredients:
  • 2 slices energy plus bread
  • Olive oil spray
  • 2 baby cos lettuce, leaves torn
  • 400g peeled & cooked king prawns
  • 3/4 cup Cottage Cheese
  • 1 egg white
  • 1 clove garlic, peeled
  • 2.95 gm Dijon mustard
  • 4 anchovy fillets
  • 20.00 ml shaved parmesan cheese
  • Freshly ground black pepper
Instructions:
  • Preheat the oven to 180°C. Place the bread on a baking tray and gently coat with olive oil spray. Bake for about 10 minutes until it's golden and crispy. Allow it to cool before using.
  • In a spacious salad bowl, combine crisp coz lettuce, succulent prawns, and bread transformed into delightful bite-sized croutons.
  • In a blender, combine cottage cheese, egg white, garlic, mustard, and anchovies until smooth. If needed, add a splash of water to adjust consistency. Drizzle dressing over salad, toss with parmesan, and season with black pepper. Serve promptly.
