Prawn cocktail canapes

Impress guests with elegant prawn cocktail canapés - succulent prawns, zesty cocktail sauce, and crispy lettuce on delicate crackers.
Ingredients:
  • 39.60 gm good-quality low-fat mayonnaise
  • 20.00 ml low-fat Greek yoghurt
  • 60ml tomato sauce
  • 21.00 gm lemon juice, plus lemon wedges to serve
  • 1/2 iceberg lettuce
  • 18 round wafer crispbreads (we used Falwasser crispbreads - see note)
  • 18 small cooked prawns, peeled, deveined
  • 18 flat-leaf parsley leaves
Instructions:
  • Combine mayonnaise, yogurt, tomato sauce, lemon juice, sea salt, and freshly ground black pepper in a bowl. Adjust seasoning to taste. Set aside.
  • Select the freshest leaves from the iceberg lettuce, tightly roll them, and finely shred into thin ribbons.
  • When serving, place a small amount of cocktail sauce on each crispbread, add a generous sprinkle of shredded lettuce, and place a prawn on top. Drizzle the remaining cocktail sauce over the prawns, garnish with a parsley leaf, and serve with lemon wedges.
