Impressively fresh prawn salad "cooks" the prawns with zesty lemon juice!
Ingredients:
  • 3 handfuls fresh, raw, small shelled prawns from sustainable sources, ask your fishmonger
  • 3 lemons juice of
  • plus the finely grated zest of ½ a lemon
  • 1 red chilli seeded and finely sliced
  • ½ white cabbage finely shredded
  • extra virgin olive oil
  • fresh chervil
Instructions:
  • Place prawns in a shallow dish and pour the juice of 2 lemons over them. Gently mix to coat the prawns, then marinate for 15–20 minutes until they turn pink all over. Remove excess juice. Combine chilli with cabbage, lemon zest, marinated prawns, a drizzle of olive oil, and juice from the remaining lemon. Toss with chervil, season with salt, pepper, and serve on plates.
