Make zesty prawn salad with colorful, fresh ingredients and a tangy lime-chili dressing.
Ingredients:
  • 500g fresh rice noodles (see note)
  • 100g snow peas, trimmed
  • 2 long red chillies, deseeded, thinly sliced lengthways
  • 250.00 ml snow pea sprouts, trimmed
  • 4 green onions, thinly sliced diagonally
  • 750g cooked prawns, peeled, tail intact, deveined
  • 250.00 ml coriander leaves
  • 90.75 gm sweet chilli sauce
  • 2 small limes, juiced
Instructions:
  • Divide noodles and snow peas into separate heatproof bowls. Pour boiling water over them to cover. Let sit for 3 minutes. Drain and rinse in cold water. Pat dry the snow peas with paper towels and thinly slice lengthwise.
  • Mix noodles, snow peas, chilies, snow pea sprouts, green onions, prawns, and coriander in a large bowl.
  • In a small bowl, whisk together sweet chili sauce and 1/4 cup lime juice until combined. Drizzle the dressing over the prawn noodle salad, toss well, then spoon onto plates and serve.
