Prawn noodle salad

Ingredients:
  • 250g dried rice vermicelli noodles
  • 2 carrots, thinly sliced into matchsticks
  • 1 red capsicum, thinly sliced
  • 2 celery sticks, thinly sliced
  • 100g snow peas, thinly sliced diagonally
  • 2 green onions, thinly sliced diagonally
  • 750g cooked king prawns, peeled, tails intact, deveined
  • 24.00 gm toasted sesame seeds
  • 82.50 ml rice wine vinegar
  • 86.63 gm light soy sauce
  • 10.00 gm caster sugar
  • 30.00 ml sesame oil
Instructions:
  • 1. Place noodles in a large heatproof bowl and cover with boiling water. Let them sit for 5 minutes until soft. Drain and rinse under cold water. Return to the bowl and cut into large pieces with scissors. Add carrot, capsicum, celery, snow peas, onions, prawns, and sesame seeds.
  • Combine vinegar, soy sauce, sugar, and oil in a bowl and whisk together. Pour the mixture over the noodles and toss well. Cover and refrigerate for 30 minutes before serving. Enjoy!
