Try zesty prawn tacos with fresh guacamole, smoky mayo, and coriander for a refreshing twist on Mexican cuisine.
Ingredients:
  • 1/2 red onion, finely chopped
  • 1/2 long red chilli, seeded, finely chopped (optional)
  • 1 tomato, finely chopped
  • 12 white corn tortillas
  • 1 baby cos lettuce, leaves separated
  • 36 (about 750g) cooked tiger prawns, peeled
  • 187.50 ml fire roasted red pepper strips (roasted capsicum)
  • 250.00 ml coriander sprigs
  • Lime wedges, to serve
  • 150g mayonnaise
  • 0.63 gm smoked paprika
  • 1/4 tsp Mexican chilli powder
  • 10.60 gm lime juice, extra
Instructions:
  • Combine ripe avocado and fresh lime juice in a bowl, mashing until creamy. Mix in diced onion, optional spicy chili, and fresh tomato. Season with your favorite spices.
  • In a bowl, mix together mayonnaise, paprika, chili powder, lime juice, 2 tsp water, and season to make smoky mayonnaise.
  • Follow the packet instructions to warm the tortillas. Place the warm tortillas on serving plates. Layer with guacamole, lettuce, prawns, capsicum, smoky mayonnaise, and coriander. Serve with lime wedges.
