Explore the exciting fusion of a classic toasted sandwich and flavorful Chinese prawn toasts using soft and spongy white bread. Try it out for a unique and delicious experience!
Ingredients:
  • 2 spring onions
  • 160 g raw peeled king prawns from sustainable sources
  • 2 cm piece of ginger
  • ½ tablespoon low-salt soy sauce
  • 1 large free-range egg
  • 4 slices of white bread
  • 2 tablespoons sesame seeds
  • olive oil
  • 1 tablespoon sweet chilli sauce
Instructions:
  • Trim the spring onions on a large board, then finely chop with most of the prawns (leaving four aside). Peel and finely grate the ginger on top of the mixture, followed by adding the soy sauce and egg yolk (set aside the white). Combine everything well. Spread the filling between two slices of bread and top with the other slices to form sandwiches. Heat a toastie machine or a non-stick frying pan. Brush both sides of each sandwich with the egg white, sprinkle sesame seeds and press the halved prawns onto one side of the bread. If using a toastie machine, cook for 3 minutes. If using a pan, toast with 1 teaspoon of olive oil for 2 1/2 minutes on each side until golden and cooked through. Slice and serve with sweet chilli sauce for dipping or brushed on top for extra flavor.
