Prawn toast

Whip up irresistible prawn toasts that will keep everyone coming back for more at your Asian feast.
Ingredients:
  • 6 slices day-old white bread
  • 500g green prawns, peeled, deveined
  • 2 green onions, chopped
  • 2cm piece ginger, peeled, grated
  • 1 eggwhite
  • 2.50 gm cornflour
  • 5.30 gm soy sauce
  • 1/4 tsp white pepper
  • 49.50 gm sesame seeds
  • peanut oil, for frying
Instructions:
  • Preheat your oven to 150°C. Trim the crusts off the bread slices, then cut each slice into 4 triangles.
  • Dry prawns with paper towel. Combine with onion, ginger, eggwhite, cornflour, soy sauce, salt, and white pepper in a food processor. Blend until smooth.
  • Take 2 teaspoons of prawn mixture and spread it over each bread triangle. Then, spread sesame seeds onto a plate and dip the bread, prawn side down, into the sesame seeds.
  • Fill your wok with oil one-third full and heat until a small piece of bread sizzles when dropped in. Cook prawn toasts in batches, with the prawn side down, for 1 minute. Flip and cook for another 15 to 30 seconds until golden. Place on a wire rack over a baking tray, keep warm in the oven, and repeat with the remaining prawn toasts.
