Chinese prawn toasts

Create homemade prawn appetizers for a delicious snack or starter.
Ingredients:
  • 600g prawn
  • 82.50 ml sliced water chestnuts, drained
  • 20.00 ml finely chopped fresh coriander leaves
  • 10.60 gm light soy sauce
  • 1 egg white
  • 1/4 tsp ground white pepper
  • 6 slices day-old white bread, crusts removed
  • 12.00 gm sesame seeds
  • 682.50 gm peanut oil
Instructions:
  • Combine prawn, water chestnuts, coriander, soy sauce, egg white, and pepper in a food processor. Add salt to taste. Blend until smooth, then transfer the mixture to a bowl. Cover with plastic wrap and refrigerate for 30 minutes.
  • Evenly distribute the prawn mixture on one side of each bread slice. Cut the slices into quarters and sprinkle with sesame seeds.
  • Heat oil in a wok over medium-high heat. Place bread prawn-side down in the hot oil and cook in batches for 1 minute until golden. Flip and cook for another minute. Remove using a slotted spoon and transfer to a baking tray lined with paper towel. Serve.
