Sesame and lime prawn toasts

Sesame and lime prawn toasts - a perfect appetizer for Chinese New Year festivities.
Ingredients:
  • 500g raw prawns, tail removed
  • 1 tsp fresh minced garlic
  • 1 tsp fresh minced ginger
  • 1 tsp sesame oil
  • 5.30 gm light soy sauce
  • 1 tsp shao xing rice wine
  • 20.00 ml lime zest (from about 2 limes)
  • 75.00 gm white sesame seeds
  • 10 slices white toast bread, a day old if possible
  • 1 litre vegetable oil, for deep frying
  • 51.60 gm plum sauce
  • Juice of 2 limes
Instructions:
  • Combine prawns, ginger, garlic, sesame oil, soy sauce, rice wine, and 1 ½ tablespoons of lime zest in a small food processor or blender and blend until smooth.
  • Trim bread crusts off, generously spread prawn mixture evenly to the edges making it 1cm thick.
  • Cut the bread diagonally twice to create four small triangles.
  • Spread sesame seeds on a small plate. Place one triangle with the prawn mixture facing down to coat evenly with sesame seeds. Repeat with remaining triangles. Set aside.
  • Heat vegetable oil in a wok or large saucepan until it reaches 170 degrees Fahrenheit. Slowly fry 4-6 prawn triangles at a time, starting with the prawn mixture side down. Flip after a few minutes and cook for another minute until golden brown. Drain on paper towels and continue with the remaining triangles.
  • Mix together the plum sauce and lime juice until fully combined to create a flavorful dipping sauce.
  • Sprinkle the prawn toasts with the remaining lime zest and serve alongside the dipping sauce.
