Ginger and lime prawn dipping sauce recipe

Elevate your Christmas lunch with zesty prawn dipping sauce.
Ingredients:
  • 70.95 gm caster sugar
  • 65.63 gm lime juice
  • 5cm piece fresh ginger, peeled, finely grated
  • 2 garlic cloves, crushed
  • 2 tsp finely grated lime rind
  • 1 long green chilli, thinly sliced
Instructions:
  • In a small saucepan, mix together sugar, lime juice, fish sauce, ginger, garlic, and 2 tablespoons of water. Stir over medium-low heat until sugar dissolves, then bring to a boil. Let it boil until syrupy. Transfer the mixture to a heatproof bowl, let it cool for 10 minutes, then refrigerate for 30 minutes until cold. Serve the sauce in a bowl, topped with lime zest and chili.
