Make tasty and crispy homemade Chinese prawn toasts!
Ingredients:
  • 350g green prawn meat
  • 1 garlic clove, roughly chopped
  • 1 tsp finely grated ginger
  • 2 eggwhites
  • 2 spring onions, chopped
  • 10.60 gm light soy sauce, plus extra to serve
  • 6 slices white bread, crusts removed
  • Sesame oil, to brush
  • 49.50 gm sesame seeds
  • Sunflower oil, to shallow-fry
  • Micro herbs (see note), to garnish
Instructions:
  • Combine prawn meat, garlic, ginger, egg whites, spring onion, and soy sauce in a food processor and blend until smooth. Season with sea salt and freshly ground black pepper. Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes.
  • Gently coat one side of each bread slice with a touch of fragrant sesame oil. Next, generously spread the delectable prawn mixture over the oiled side, ensuring it evenly blankets every inch of the bread.
  • Spread sesame seeds onto a small plate. Press prawn side of toasts into sesame seeds to coat evenly.
  • Fry the bread slices in a shallow layer of hot oil until golden and crispy on both sides, about 1-2 minutes each. Place on paper towels to drain excess oil, then cut into triangles.
  • Garnish with delicate micro herbs and present with a side of additional soy sauce for dipping.
