Sesame prawn toasts

Delicious seafood spread with sesame seeds on crunchy fried bread, topped with fresh cress or sprouts.
Ingredients:
  • 6 large green prawns, peeled, deveined
  • 100g smoked trout fillet
  • 4 eschalots, chopped
  • 4 thick slices white bread
  • 36.00 gm sesame seeds
  • Vegetable oil, to shallow-fry
  • Mustard cress or snow pea sprout leaves, to garnish (see Notes)
Instructions:
  • Combine prawns, trout, and eschalots in a food processor. Season with salt and pepper, then process until well combined. Spread the mixture onto the bread and cut into fingers, removing the crusts. Finish by coating the tops with sesame seeds.
  • Heat a generous amount of oil in a deep frypan until it shimmers. Fry the bread for 1 minute on each side until beautifully golden. Place on paper towel to drain excess oil. Serve as an appetiser, topped with cress or sprouts for a lovely presentation.
